Canned jackfruit
2 (20 oz) cans, drained and rinsed
Olive oil
2 tablespoons
Onion
1, diced
Garlic
3 cloves, minced
Cumin
1 teaspoon
Smoked paprika
1 teaspoon
Chili powder
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Lime juice
2 tablespoons, freshly squeezed
Corn tortillas
8 small
Avocado
1, sliced
Fresh cilantro
1/4 cup, chopped
Salsa
1 cup, store-bought or homemade

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
  3. Introduce the drained and rinsed jackfruit to the skillet, breaking it apart with a fork or spatula into smaller pieces.
  4. Sprinkle in the cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to ensure the jackfruit is evenly coated with the spices.
  5. Cook the jackfruit mixture for about 10 minutes, stirring occasionally, until heated through and flavors meld together.
  6. Remove the skillet from heat and drizzle freshly squeezed lime juice over the jackfruit. Stir to combine.
  7. In a separate skillet or in the oven, warm the corn tortillas until soft and pliable.
  8. Assemble the tacos by placing a generous scoop of the jackfruit mixture onto each tortilla.
  9. Top each taco with sliced avocado, chopped cilantro, and a spoonful of salsa.
