- Black beans
- 1 can (15 oz), drained and rinsed
- Corn kernels
- 1 cup (fresh or canned)
- Red bell pepper

- Green onions
- 2, sliced
- Jalapeno
- 1, sliced (remove seeds for less heat)
- Vegan cheese
- 2 cups, shredded
- Guacamole
- 1 cup, store-bought or homemade
- Salsa
- 1 cup, store-bought or homemade
- Cilantro
- 1/4 cup, chopped
- Lime
- 1, cut into wedges
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the tortilla chips evenly on a baking sheet, ensuring they are not overlapping.
- In a bowl, combine the drained black beans, corn kernels, diced red bell pepper, sliced green onions, and jalapeno. Mix well to combine.
- Evenly distribute the black bean mixture over the tortilla chips, ensuring each chip gets a generous helping.
- Sprinkle the shredded vegan cheese over the top of the nachos, covering as much as possible.
- Bake in the preheated oven for 10-12 minutes, or until the vegan cheese is melted and bubbly.
