Ingredients

Tortilla chips
1 large bag
Black beans
1 can (15 oz), drained and rinsed
Corn kernels
1 cup (fresh or canned)
Red bell pepper
1, diced
Green onions
2, sliced
Jalapeno
1, sliced (remove seeds for less heat)
Vegan cheese
2 cups, shredded
Guacamole
1 cup, store-bought or homemade
Salsa
1 cup, store-bought or homemade
Cilantro
1/4 cup, chopped
Lime
1, cut into wedges

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the tortilla chips evenly on a baking sheet, ensuring they are not overlapping.
  3. In a bowl, combine the drained black beans, corn kernels, diced red bell pepper, sliced green onions, and jalapeno. Mix well to combine.
  4. Evenly distribute the black bean mixture over the tortilla chips, ensuring each chip gets a generous helping.
  5. Sprinkle the shredded vegan cheese over the top of the nachos, covering as much as possible.
  6. Bake in the preheated oven for 10-12 minutes, or until the vegan cheese is melted and bubbly.
  7. Remove from the oven and immediately top with dollops of guacamole and salsa.
