Vegan Pastrami Sandwich

Indulge in the savory and smoky flavors of this Vegan Pastrami Sandwich, a delightful twist on a classic deli favorite. Made with seitan, a versatile plant-based protein, and infused with a homemade spice rub, this sandwich is layered with tangy sauerkraut and creamy vegan mayo, all nestled between hearty rye bread. Perfect for lunch or a light dinner, this sandwich is not only satisfying but also a nod to the rich history of Jewish delis in America, where pastrami sandwiches have long been a staple.

Serves 4

Ingredients

Rye bread
8 slices
Vegan mayo
1/4 cup
Sauerkraut
1 cup
Mustard powder
1 teaspoon
Coriander
1 teaspoon
Black pepper
1/2 teaspoon
Garlic powder
1 teaspoon
Paprika
2 teaspoons
Seitan
8 ounces, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, combine the paprika, garlic powder, black pepper, coriander, and mustard powder to create a spice rub.
  3. Rub the spice mixture generously over the sliced seitan, ensuring each piece is well-coated.
  4. Place the seasoned seitan on a baking sheet and bake for 30 minutes, or until heated through and slightly crispy.
  5. While the seitan is baking, spread the vegan mayo evenly on one side of each slice of rye bread.
  6. Once the seitan is ready, layer it onto 4 slices of bread, followed by a generous helping of sauerkraut.
  7. Top with the remaining slices of bread, mayo side down, to complete the sandwiches.
  8. Serve the sandwiches warm or at room temperature, and enjoy the delicious flavors!

Tips

  • 💡 For added flavor, consider toasting the rye bread before assembling the sandwich.
  • 💡 Feel free to add slices of avocado or fresh veggies like lettuce and tomato for extra crunch and nutrition.
  • 💡 If you prefer a spicier kick, add a dash of cayenne pepper to the spice rub.
