- Unsalted butter
- 2 tablespoons
- Onion

- Carrots

- Celery
- 2 stalks, diced
- Potatoes
- 2 cups, diced
- Frozen peas
- 1 cup
- Frozen corn
- 1 cup
- Vegetable broth
- 4 cups
- Milk
- 1 cup
- All-purpose flour
- 1/4 cup
- Fresh parsley
- 1/4 cup, chopped
- Salt

- Black pepper

Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
- Stir in the diced potatoes, corn, and peas, mixing well to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes, or until the potatoes are fork-tender.
- In a separate bowl, whisk together the milk and flour until smooth. Slowly pour this mixture into the pot, stirring constantly to prevent lumps.
- Continue to cook for another 5 minutes, or until the chowder thickens to your desired consistency.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
