Unsalted butter
2 tablespoons
Onion
1, diced
Carrots
2, diced
Celery
2 stalks, diced
Potatoes
2 cups, diced
Frozen peas
1 cup
Frozen corn
1 cup
Vegetable broth
4 cups
Milk
1 cup
All-purpose flour
1/4 cup
Fresh parsley
1/4 cup, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the diced potatoes, corn, and peas, mixing well to combine.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes, or until the potatoes are fork-tender.
  5. In a separate bowl, whisk together the milk and flour until smooth. Slowly pour this mixture into the pot, stirring constantly to prevent lumps.
  6. Continue to cook for another 5 minutes, or until the chowder thickens to your desired consistency.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
