Vibrant Veggie and Cream Cheese Sandwich

The Vibrant Veggie and Cream Cheese Sandwich is more than just a meal; it's a colorful canvas of fresh, crisp, and creamy flavors. A delightful symphony of garden-fresh vegetables, luscious avocado, and smooth cream cheese nestled between hearty slices of whole wheat bread. This sandwich is a testament to the simple beauty of plant-based ingredients, rooted in the traditional vegetarian fare of the 1970s health food movement.

Ingredients

Whole wheat bread
4 slices
Cream cheese
4 tablespoons, softened
Cucumber
1 medium, thinly sliced
Tomato
1 medium, thinly sliced
Avocado
1 ripe, pitted and thinly sliced
Lettuce leaves
4 large
Salt
to taste
Black pepper
to taste

Instructions

  1. Start by preparing all the vegetables. Thinly slice the cucumber, tomato, and avocado. Wash and dry the lettuce leaves.
  2. Spread a generous tablespoon of softened cream cheese on one side of each slice of whole wheat bread.
  3. On two of the bread slices, layer the cucumber slices, tomato slices, and avocado slices. Top each with a large lettuce leaf.
  4. Season the vegetables with salt and pepper to your liking.
  5. Cover the vegetables with the two remaining bread slices, cream cheese side down.
  6. Press gently to adhere the ingredients together. Then, using a sharp knife, cut each sandwich in half diagonally.
  7. Serve immediately for the freshest taste, or wrap tightly in plastic wrap for an easy on-the-go lunch.

Tips

  • 💡 Try toasting the bread for added crunch. For a different flavor, swap the cream cheese for hummus or a flavored dairy-free spread. To make this sandwich even more filling, add a slice of your favorite cheese or some roasted turkey.
