
Veggie and Feta Stuffed Sweet Potato
This delicious stuffed sweet potato is filled with a flavorful mixture of vegetables and feta cheese.
Ingredients
- Salt and pepper (to taste)
- Feta cheese (1/2 cup, crumbled)
- Spinach (2 cups)
- Garlic (2 cloves, minced)
- Red onion (1/2, diced)
- Zucchini (1, diced)
- Red bell pepper (1, diced)
- Olive oil (2 tablespoons)
- Sweet potatoes (2 medium-sized)
Instructions
- Preheat the oven to 400°F.
- Wash the sweet potatoes and prick them several times with a fork.
- Place the sweet potatoes on a baking sheet and bake for 40-45 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat.
- Add the red bell pepper, zucchini, red onion, and garlic to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Remove the sweet potatoes from the oven and let them cool slightly.
- Cut a slit lengthwise in each sweet potato and gently push the ends towards the center to create an opening.
- Scoop out some of the flesh from each sweet potato and transfer it to a bowl.
- Mash the sweet potato flesh with a fork and season with salt and pepper.
- Add the cooked vegetables and feta cheese to the bowl with the mashed sweet potato. Mix well to combine.
- Spoon the vegetable and feta mixture back into the sweet potato shells.
- Place the stuffed sweet potatoes back in the oven for an additional 5 minutes to heat through.
- Serve hot and enjoy!
