- 1 can (15 oz), drained and rinsed Black beans
- 1 cup, cooked Quinoa
- 1 medium, grated Carrot

- 2 cloves, minced Garlic
- 1, beaten Egg
- 1/2 cup Breadcrumbs
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- for cooking Vegetable oil
- 4 Hamburger buns
- 4 leaves Lettuce
- 1, sliced Tomato

Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, grated carrot, grated zucchini, diced red bell pepper, diced onion, minced garlic, breadcrumbs, beaten egg, cumin, paprika, salt, and pepper. Mix well until all ingredients are fully combined into a cohesive mixture.
- Form the mixture into patties, approximately 1/2 inch thick. You should yield about 4 patties.
- Heat a grill or skillet over medium heat and lightly oil the surface to prevent sticking.
- Cook the veggie burgers for about 5-6 minutes on each side, or until they are golden brown and heated through.
- While the burgers are cooking, toast the hamburger buns on the grill or in a toaster until golden.
- Spread 1 tablespoon of mayonnaise on the bottom half of each bun, then place a veggie burger patty on top.

- Spread 1 tablespoon of ketchup on the top half of each bun and place it atop the burger.
