- Corn (1 cup, canned or frozen)
- Red onion (1/2, diced)
- Bell peppers (2 (any color), diced)
- Black beans (1 can (15 oz), drained and rinsed)
- Tortillas (4 (10-inch) flour or corn tortillas)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced bell peppers and red onion to the skillet. Sauté until they start to soften, about 5 minutes.
- Stir in the corn and black beans. Season the mixture with cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally, until heated through.
