This veggie delight burrito is packed with colorful vegetables and flavorful spices.
Ingredients
- Salt and pepper (to taste)
- Paprika (1/2 teaspoon)
- Cumin (1 teaspoon)
- Lime juice (1 tablespoon)
- Cilantro (2 tablespoons, chopped)
- Lettuce (1 cup, shredded)
- Cherry tomatoes (1/2 cup, halved)
- Avocado (1, sliced)
- Corn (1/2 cup)
- Red onion (1/4 cup, sliced)
- Bell peppers (1/2 cup, sliced)
- Black beans (1 cup, cooked)
- Tortillas (2 large)
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the bell peppers and red onion, and cook until they start to soften, about 5 minutes.
- Add the corn and black beans to the skillet, and season with cumin, paprika, salt, and pepper. Cook for another 5 minutes.
- Warm the tortillas in a separate skillet or in the microwave.
- Place the warm tortillas on a flat surface and divide the vegetable mixture evenly between them.
- Top with avocado slices, cherry tomatoes, shredded lettuce, and chopped cilantro.
- Drizzle with lime juice.
- Fold the sides of the tortillas over the filling, then roll them up tightly.
- Serve the veggie delight burritos immediately, or wrap them in foil to keep warm.
