Instructions
- To make the Russian dressing, combine 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon horseradish, 1 teaspoon Worcestershire sauce, and a sprinkle of paprika in a small bowl. Mix until well combined and set aside.
- Preheat the grill or grill pan over medium heat.
- In a bowl, toss the sliced zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper until evenly coated.
- Grill the vegetables for 3-4 minutes per side, or until tender and lightly charred, then remove from the grill and set aside.
- Spread a generous layer of Russian dressing on one side of each slice of rye bread.
- On two slices of bread, layer Swiss cheese, the grilled vegetables, and sauerkraut.
- Top with the remaining slices of bread, dressing side down.
- Heat a large skillet over medium heat and place the sandwiches in the skillet.
- Cook for 2-3 minutes per side, or until the bread is toasted and the cheese is melted.
- Remove from the skillet, slice in half, and serve hot, with extra Russian dressing on the side for dipping.
Tips
- For added flavor, try marinating the vegetables in balsamic vinegar for 30 minutes before grilling.
- Feel free to substitute the Swiss cheese with provolone or gouda for a different flavor profile.
- You can also add fresh spinach or arugula for a peppery kick.
