Veggie Sushi Rolls

These delicious veggie sushi rolls are filled with fresh vegetables and wrapped in nori seaweed.

Ingredients

  • Wasabi (for serving)
  • Pickled ginger (for serving)
  • Soy sauce (for dipping)
  • Red bell pepper (1, julienned)
  • Avocado (1, sliced)
  • Carrot (1, julienned)
  • Cucumber (1, julienned)
  • Nori seaweed sheets (4 sheets)
  • Sushi rice (2 cups, cooked)

Instructions

  1. Place a sheet of nori seaweed on a bamboo sushi mat.
  2. Spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top.
  3. Arrange the julienned cucumber, carrot, avocado, and red bell pepper in a line across the center of the rice.
  4. Using the bamboo mat, tightly roll the sushi, applying gentle pressure to ensure it holds its shape.
  5. Repeat with the remaining ingredients to make additional rolls.
  6. Slice each sushi roll into bite-sized pieces.
  7. Serve the veggie sushi rolls with soy sauce, pickled ginger, and wasabi.
