Ingredients

Wasabi
1 tablespoon, or to taste
Pickled ginger
2 tablespoons
Soy sauce
1/4 cup
Red bell pepper
1, julienned
Avocado
1, sliced
Carrot
1, julienned
Cucumber
1, julienned
Nori seaweed sheets
5 sheets
Sushi rice
2 cups, cooked and seasoned

Instructions

  1. Prepare a bamboo sushi mat by wrapping it in plastic wrap. This prevents the rice from sticking to the mat.
  2. Place a sheet of nori seaweed on the prepared bamboo sushi mat.
  3. Spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top to help seal the roll.
  4. Arrange the julienned cucumber, carrot, sliced avocado, and red bell pepper in a line across the center of the rice.
  5. Lift the edge of the mat over the fillings and roll it forward while keeping the fillings in place. Gently squeeze the mat to compact the roll. Continue rolling until the entire roll is complete.
  6. Use a sharp, wet knife to slice each sushi roll into 8 bite-sized pieces. Wipe the knife clean between each cut to ensure smooth slices.
  7. Serve the veggie sushi rolls with soy sauce, pickled ginger, and wasabi. Enjoy this traditional Japanese delicacy, which dates back to the 8th century, as a light meal or a healthy snack.
