Sour cream
1 cup
Salt and pepper

Lime
1, juiced
Cilantro
1/4 cup, finely chopped
Avocado
1, sliced
Corn kernels
1 cup, fresh or frozen
Black beans
1 cup, cooked
Red onion
1, medium, thinly sliced
Zucchini
1, medium, thinly sliced
Bell peppers
2, medium, thinly sliced
Corn tortillas

Instructions

  1. In a large skillet, heat a drizzle of oil over medium heat.
  2. Add bell peppers, zucchini, and red onion, sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in black beans and corn kernels. Season with salt and pepper, then continue to cook for another 2-3 minutes.
  4. In a small bowl, mix together sour cream, lime juice, and chopped cilantro to create a zesty cilantro-lime sour cream sauce.
  5. Warm the corn tortillas in a dry skillet over medium heat or in the microwave for 10-15 seconds.
  6. To assemble the tacos, spread a generous spoonful of the cilantro-lime sour cream onto each warmed tortilla.
  7. Layer the sautéed vegetables, sliced avocado, and a drizzle of hot sauce on top of the sour cream.
