Ingredients

  • Hot sauce (to taste)
  • Sour cream (1 cup)
  • Salt and pepper (to taste)
  • Lime (1, juiced)
  • Cilantro (1/4 cup, finely chopped)
  • Avocado (1, sliced)
  • Corn kernels (1 cup, fresh or frozen)
  • Black beans (1 cup, cooked)
  • Red onion (1, medium, thinly sliced)
  • Zucchini (1, medium, thinly sliced)
  • Bell peppers (2, medium, thinly sliced)
  • Corn tortillas (8)

Instructions

  1. In a large skillet, heat a drizzle of oil over medium heat.
  2. Add bell peppers, zucchini, and red onion, sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in black beans and corn kernels. Season with salt and pepper, then continue to cook for another 2-3 minutes.
  4. In a small bowl, mix together sour cream, lime juice, and chopped cilantro to create a zesty cilantro-lime sour cream sauce.
  5. Warm the corn tortillas in a dry skillet over medium heat or in the microwave for 10-15 seconds.
