Authentic Vietnamese Pho

- 1 lime, cut into wedges Lime wedges

- 1 bunch, chopped Cilantro
- 4, chopped Scallions
- 1 pound, thinly sliced Beef sirloin
- 8 ounces Rice noodles

- 2 tablespoons Fish sauce
- 1 tablespoon Coriander seeds
- 2 Cardamom pods
- 1 Cinnamon stick
- 5 Cloves
- 2 Star anise
- 1 (3-inch) piece, peeled and sliced Ginger
- 2, halved Onions
- 2 pounds Beef bones

Instructions
- Char the onions and ginger on a grill or gas stove until they are slightly blackened. This will take about 5 minutes.
- In a large pot, place the beef bones and fill it with water. Bring the water to a boil and continue boiling for 5 minutes.
- Drain the bones, rinse them under warm water, and clean the pot. Return the bones to the pot.
- Add the charred onions, ginger, star anise, cloves, cinnamon stick, cardamom pods, and coriander seeds to the pot. Fill the pot with water and bring it to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 1-2 hours. This will allow the flavors to meld together.
- Strain the broth and return it to the pot. Stir in the fish sauce and season with salt according to your taste preference.
- Soak the rice noodles in warm water for 30 minutes, then drain and set them aside.
- Divide the noodles among 4 bowls. Top each bowl with beef slices, scallions, and cilantro.
- Pour the hot broth over the noodles. The heat from the broth will cook the beef slices.
- Serve the Pho with a side of bean sprouts and lime wedges for added flavor and crunch.
