Instructions
- In a mixing bowl, combine the mochiko and sugar, ensuring they are well blended.
- Gradually add water to the mixture, stirring continuously until a smooth batter forms.
- Pour the mixture into a heatproof dish, spreading it evenly with a spatula to smooth the surface.
- Prepare your steamer and steam the mixture over high heat for about 20 minutes, or until it becomes translucent and slightly firm.
- Carefully remove the dish from the steamer and allow it to cool at room temperature.
- Once cooled, dust a clean surface with cornstarch to prevent sticking. Turn the mochi out onto the cornstarch-dusted surface.
- Cut the mochi into 8 equal pieces and flatten each piece with your hands.
- Place a spoonful of sweet red bean paste in the center of each flattened mochi piece.
- Fold the edges of the mochi over the filling and pinch to seal tightly, forming a rounded shape.
- Serve your wagashi with a cup of hot green tea for a delightful experience.
