Wagashi is a delightful traditional Japanese sweet crafted to accompany tea, embodying the essence of Japanese culture and aesthetics. These delicate confections are made from a sweetened red bean paste encased in soft, chewy mochi, making each bite a harmonious blend of flavors and textures. Originating from the Edo period, wagashi not only serves as a treat but also as an art form, often shaped to reflect the seasons or special occasions.

Ingredients

Mochiko (glutinous rice flour)
1 cup
Sugar
1/4 cup
Water
3/4 cup
Cornstarch
for dusting
Sweet red bean paste
1 cup

Instructions

  1. In a mixing bowl, combine the mochiko and sugar, ensuring they are well blended.
  2. Gradually add water to the mixture, stirring continuously until a smooth batter forms.
  3. Pour the mixture into a heatproof dish, spreading it evenly with a spatula to smooth the surface.
  4. Prepare your steamer and steam the mixture over high heat for about 20 minutes, or until it becomes translucent and slightly firm.
  5. Carefully remove the dish from the steamer and allow it to cool at room temperature.
  6. Once cooled, dust a clean surface with cornstarch to prevent sticking. Turn the mochi out onto the cornstarch-dusted surface.
  7. Cut the mochi into 8 equal pieces and flatten each piece with your hands.
  8. Place a spoonful of sweet red bean paste in the center of each flattened mochi piece.
  9. Fold the edges of the mochi over the filling and pinch to seal tightly, forming a rounded shape.
  10. Serve your wagashi with a cup of hot green tea for a delightful experience.
