Ingredients

Lamb, cubed
2 lbs
Onions, chopped
2 medium
Garlic, minced
4 cloves
Potatoes, peeled and cubed
4 medium
Waterblommetjies, cleaned
2 cups
Bay leaves

Salt
to taste
Black pepper
to taste
Chicken stock
4 cups
White wine
1 cup
Olive oil
2 tablespoons

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Brown the cubed lamb in batches, ensuring not to overcrowd the pot. Remove the browned lamb and set aside.
  2. In the same pot, sauté the chopped onions and minced garlic until they are soft and translucent, about 5 minutes.
  3. Return the browned lamb to the pot. Add the cubed potatoes, white wine, chicken stock, bay leaves, salt, and pepper. Stir to combine all ingredients.
  4. Cover the pot and simmer on low heat for 1 hour, allowing the flavors to meld and the lamb to become tender.
  5. After 1 hour, add the cleaned waterblommetjies to the pot. Cover and continue to simmer for another hour, or until the lamb is fork-tender and the waterblommetjies are soft.
  6. Taste and adjust the seasoning if necessary before serving hot.
