Ingredients
- Lamb, cubed (2 lbs)
- Onions, chopped (2 medium)
- Garlic, minced (4 cloves)
- Potatoes, peeled and cubed (4 medium)
- Waterblommetjies, cleaned (2 cups)
- Bay leaves (2)
- Salt (to taste)
- Black pepper (to taste)
- Chicken stock (4 cups)
- White wine (1 cup)
- Olive oil (2 tablespoons)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Brown the cubed lamb in batches, ensuring not to overcrowd the pot. Remove the browned lamb and set aside.
- In the same pot, sauté the chopped onions and minced garlic until they are soft and translucent, about 5 minutes.
- Return the browned lamb to the pot. Add the cubed potatoes, white wine, chicken stock, bay leaves, salt, and pepper. Stir to combine all ingredients.
- Cover the pot and simmer on low heat for 1 hour, allowing the flavors to meld and the lamb to become tender.
- After 1 hour, add the cleaned waterblommetjies to the pot. Cover and continue to simmer for another hour, or until the lamb is fork-tender and the waterblommetjies are soft.
- Taste and adjust the seasoning if necessary before serving hot.
