
Watermelon and Cucumber Gazpacho
This refreshing gazpacho is made with juicy watermelon, crisp cucumber, and tangy lime juice.
Ingredients
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Extra virgin olive oil (2 tablespoons)
- Lime juice (2 tablespoons)
- Fresh mint leaves (1/4 cup, chopped)
- Red onion (1/4 cup, finely chopped)
- Cucumber (1 large, peeled and diced)
- Watermelon (4 cups, diced)
Instructions
- In a blender, combine the watermelon, cucumber, red onion, mint leaves, lime juice, olive oil, salt, and black pepper.
- Blend until smooth and well combined.
- Taste and adjust the seasoning if needed.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve chilled and garnish with additional mint leaves, if desired.
