Watermelon and Lime Popsicles

Ingredients
- 4 cups, cubed Fresh watermelon
- 1/4 cup Fresh lime juice
- 2 tablespoons, or to taste Honey
- 1/4 cup, chopped Fresh mint leaves
- 8 Popsicle sticks
- 8 molds Popsicle molds

Instructions
- Prepare your popsicle molds and sticks.
- In a blender, add the cubed watermelon and blend until you have a smooth puree.
- Add the fresh lime juice, your preferred amount of honey, and the chopped fresh mint leaves to the blender. Blend again until everything is well combined.
- Carefully pour the watermelon mixture into each popsicle mold, leaving a little space at the top for the mixture to expand as it freezes.
- Insert a popsicle stick into each mold and ensure it is standing upright.
- Place the filled molds in the freezer and let them freeze for at least 4 hours, or until the popsicles are completely frozen.
- To remove the popsicles from the molds, briefly run the molds under warm water. The popsicles should easily slide out.
- Serve immediately and enjoy your refreshing watermelon and lime popsicles!
Tips
- For a more intense flavor, you can increase the amount of lime juice.
- If you don't have popsicle molds, you can use small paper cups and peel them away once the popsicles are frozen.
- For an adult version, you can add a splash of tequila or vodka to the mixture before freezing.
