Ingredients

Original recipe serves 4

Watermelon
4 cups, cubed and seedless
Lime
juice of 2 limes
Mint leaves
10, plus extra for garnish
Sugar
2 tablespoons, adjust to taste
Ice cubes
as required for serving

Instructions

  1. In a blender, combine the seedless watermelon cubes, freshly squeezed lime juice, sugar, and fresh mint leaves.
  2. Blend the mixture until it turns into a smooth, frothy liquid.
  3. Place a fine-mesh strainer over a large pitcher. Pour the blended mixture through the strainer, this will ensure your fresca is free from seeds and any unwanted pulp.
  4. Using a spatula, press down on the solids to extract as much liquid as possible. Discard the solids.
  5. Add ice cubes to the pitcher and stir well to chill the beverage.
  6. Serve the Watermelon Fresca over ice, garnished with a sprig of mint for an added touch of freshness.
  7. Enjoy this delightful summer drink as is, or for a fun twist, mix it with sparkling water or club soda for a fizzy version.
