- 1 lb, store-bought or homemade

- 2 tablespoons, plus more for drizzling
- Garlic
- 2 cloves, minced
- Wild mushrooms
- 2 cups, sliced (such as shiitake, oyster, or chanterelles)
- Kale
- 2 cups, chopped and stems removed
- Mozzarella cheese
- 1 1/2 cups, shredded
- Parmesan cheese
- 1/2 cup, grated
- Salt
- to taste
- Pepper
- to taste
Instructions
- Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet in the oven to heat.
- On a lightly floured surface, roll out the pizza dough to your desired thickness, aiming for a rustic shape.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced wild mushrooms to the skillet and cook until tender, about 5 minutes, then add the chopped kale. Stir and cook until the kale is wilted. Season the mixture with salt and pepper to taste.
- Carefully remove the heated pizza stone or baking sheet from the oven and transfer the rolled-out dough onto it.
- Spread the shredded mozzarella cheese evenly over the dough, leaving a small border for the crust.
- Spoon the mushroom and kale mixture over the cheese, ensuring an even distribution. Finish by sprinkling the grated Parmesan cheese on top.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
- Once baked, let the pizza cool for a few minutes before slicing and serving. Drizzle with a little extra olive oil for added richness.
