Ingredients

Pizza dough
1 lb, store-bought or homemade
Olive oil
2 tablespoons, plus more for drizzling
Garlic
2 cloves, minced
Wild mushrooms
2 cups, sliced (such as shiitake, oyster, or chanterelles)
Kale
2 cups, chopped and stems removed
Mozzarella cheese
1 1/2 cups, shredded
Parmesan cheese
1/2 cup, grated
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet in the oven to heat.
  2. On a lightly floured surface, roll out the pizza dough to your desired thickness, aiming for a rustic shape.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the sliced wild mushrooms to the skillet and cook until tender, about 5 minutes, then add the chopped kale. Stir and cook until the kale is wilted. Season the mixture with salt and pepper to taste.
  5. Carefully remove the heated pizza stone or baking sheet from the oven and transfer the rolled-out dough onto it.
