Wu Xi Ribs

Ingredients
- Pork ribs
- 2 pounds, cut into individual ribs
- Water
- enough to cover the ribs
- Spring onions
- 4, chopped
- Ginger
- 1 piece (2 inches), sliced
- Cinnamon stick
- 1
- Star anise
- 2
- Rock sugar
- 1/4 cup
- Shaoxing wine
- 1/2 cup
- Light soy sauce
- 1/4 cup
- Dark soy sauce
- 1/4 cup
Instructions
- Blanch the pork ribs in boiling water for about 5 minutes to remove impurities. Drain and set aside.
- In a large pot, combine the blanched ribs, dark soy sauce, light soy sauce, Shaoxing wine, rock sugar, star anise, cinnamon stick, ginger, and chopped spring onions.
- Add enough water to cover the ribs completely. Stir to mix the ingredients well.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot.
- Simmer for about 2 hours, or until the ribs are tender and the sauce has thickened, stirring occasionally to prevent sticking.
- Once cooked, remove the ribs from the pot and place them on a serving platter. Pour the thickened sauce over the ribs for a glossy finish.
- Serve hot, garnished with additional spring onions if desired.
