Yam Wun Sen (Thai Glass Noodle Salad)

Ingredients
- Glass noodles
- 100g
- Shrimp
- 200g, peeled and deveined
- Red onion
- 1 medium, thinly sliced
- Cilantro
- 1/4 cup, chopped
- Mint leaves
- 1/4 cup, chopped
- Roasted peanuts
- 2 tablespoons, crushed
- Chili pepper
- 1, finely chopped
- Sugar
- 1 teaspoon
- Fish sauce
- 2 tablespoons
- Lime juice
- 3 tablespoons
Instructions
- Soak the glass noodles in warm water for 10 minutes. Once soft, drain and set aside.
- Boil a pot of water and cook the shrimp until they turn pink and are cooked through (about 2-3 minutes). Drain and set aside to cool.
- Prepare the dressing by whisking together lime juice, fish sauce, sugar, and finely chopped chili pepper in a small bowl. Adjust to taste, adding more sugar for sweetness or more fish sauce for saltiness.
- Combine the softened glass noodles, cooled shrimp, thinly sliced red onion, chopped cilantro, and chopped mint leaves in a large mixing bowl.
- Pour the prepared dressing over the noodle mixture. Toss well to ensure all ingredients are evenly coated with the dressing.
- Just before serving, garnish the salad with crushed roasted peanuts for a crunchy texture contrast. Serve immediately for best flavor.
