Instructions
- Heat vegetable oil in a deep pan or wok over medium-high heat until shimmering.
- Carefully add the catfish strips to the hot oil and fry until they turn crispy and golden brown, about 4-5 minutes. Remove the catfish from the oil and drain on paper towels to absorb excess oil.
- In a mixing bowl, combine the shredded green mango, thinly sliced red onion, chopped cilantro, chopped mint leaves, and crushed peanuts. Toss gently to mix the ingredients.
- In a small bowl, whisk together the lime juice, fish sauce, sugar, finely chopped Thai chili peppers, and salt until the sugar dissolves and the dressing is well combined.
- Break the crispy catfish fillets into bite-sized pieces and add them to the mixing bowl with the mango mixture.
- Pour the dressing over the salad and toss gently until everything is well coated.
- Serve the Yum Pla Duk Foo immediately as an appetizer or side dish, garnished with additional herbs if desired.
Tips
- For a spicier version, add more Thai chili peppers to the dressing or garnish the salad with sliced chili.
- You can substitute catfish with tilapia or any firm white fish if desired.
- To make the dish more filling, consider adding cooked rice noodles to the salad.
