Ingredients

Original recipe serves 4

Egg yolks
4 large
Granulated sugar
1/4 cup
Sweet Marsala wine
1/2 cup
Fresh mixed berries (strawberries, raspberries, blueberries)
2 cups
Mint leaves
for garnish

Instructions

  1. In a heatproof bowl, whisk together the egg yolks and sugar until the mixture is pale and thick.
  2. Add the Marsala wine to the egg yolk mixture and place the bowl over a pot of simmering water (double boiler), ensuring the bowl does not touch the water.
  3. Whisk the mixture continuously for about 10-15 minutes, until it becomes thick and frothy. It should double in volume and be able to hold a ribbon when drizzled.
  4. Remove the bowl from the heat and let it cool for a few minutes.
  5. In serving glasses or bowls, layer the fresh mixed berries at the bottom, then spoon the warm zabaglione over the berries.
  6. Garnish with mint leaves and serve immediately for the best texture.
