Zabaglione with Fresh Berries
Zabaglione, an exquisite Italian dessert, is a light and airy custard made with egg yolks, sugar, and sweet wine, often served with fresh berries. This elegant dessert dates back to the 15th century and is a perfect way to showcase seasonal fruits.
Ingredients
- 4 large Egg yolks
- 1/4 cup Granulated sugar
- 1/2 cup Sweet Marsala wine
- 2 cups Fresh mixed berries (strawberries, raspberries, blueberries)
- for garnish Mint leaves

Instructions
- In a heatproof bowl, whisk together the egg yolks and sugar until the mixture is pale and thick.
- Add the Marsala wine to the egg yolk mixture and place the bowl over a pot of simmering water (double boiler), ensuring the bowl does not touch the water.
- Whisk the mixture continuously for about 10-15 minutes, until it becomes thick and frothy. It should double in volume and be able to hold a ribbon when drizzled.
- Remove the bowl from the heat and let it cool for a few minutes.
- In serving glasses or bowls, layer the fresh mixed berries at the bottom, then spoon the warm zabaglione over the berries.
- Garnish with mint leaves and serve immediately for the best texture.
