Zimino di Calamari is a beloved traditional Italian dish, originating from coastal regions where the sea's bounty meets hearty, rustic cooking. Ingredients

Olive oil
3 tablespoons
Onion
1 large, diced
Garlic
3 cloves, minced
Squid
1 pound, cleaned and cut into rings
Tomato paste
3 tablespoons
White wine
1 cup
Potatoes
2 medium, peeled and diced
Spinach
4 cups, fresh
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced onion and minced garlic, and sauté until the onion becomes soft and translucent, approximately 5 minutes.
  3. Add the cleaned squid to the pot, cooking until it turns opaque, about 5 minutes.
  4. Stir in the tomato paste, ensuring to mix it well with the squid and scrape up any brown bits from the bottom of the pot for added flavor.
  5. Pour in the white wine, allowing the mixture to simmer for about 2 minutes to cook off the alcohol.
  6. Add the diced potatoes and season the mixture with salt and black pepper. Stir well to combine.
  7. Cover the pot and let it simmer for approximately 45 minutes, or until the squid is tender and the flavors meld together beautifully.
  8. During the last 5 minutes of cooking, gently fold in the fresh spinach until it wilts.
  9. Taste and adjust seasoning if necessary. Serve hot, ideally with crusty bread on the side for dipping.
