Ingredients
- Olive oil
- 3 tablespoons
- Onion
- 1 large, diced
- Garlic
- 3 cloves, minced
- Squid
- 1 pound, cleaned and cut into rings
- Tomato paste
- 3 tablespoons
- White wine
- 1 cup
- Potatoes
- 2 medium, peeled and diced
- Spinach
- 4 cups, fresh
- Salt

Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the diced onion and minced garlic, and sauté until the onion becomes soft and translucent, approximately 5 minutes.
- Add the cleaned squid to the pot, cooking until it turns opaque, about 5 minutes.
- Stir in the tomato paste, ensuring to mix it well with the squid and scrape up any brown bits from the bottom of the pot for added flavor.
- Pour in the white wine, allowing the mixture to simmer for about 2 minutes to cook off the alcohol.
- Add the diced potatoes and season the mixture with salt and black pepper. Stir well to combine.
- Cover the pot and let it simmer for approximately 45 minutes, or until the squid is tender and the flavors meld together beautifully.
- During the last 5 minutes of cooking, gently fold in the fresh spinach until it wilts.
- Taste and adjust seasoning if necessary. Serve hot, ideally with crusty bread on the side for dipping.
