Zobo Drink

Ingredients
- 2 cups Dried hibiscus petals
- 8 cups Water
- 1 inch, peeled and sliced Fresh ginger
- 6 Cloves
- 2 Cinnamon sticks
- 1 cup, or to taste Sugar
- 1 cup Pineapple juice
- 1/2 cup Lemon juice
- as needed Ice cubes
- for garnish Mint leaves

Instructions
- In a large pot, combine the dried hibiscus petals, water, sliced ginger, cloves, and cinnamon sticks.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for about 20 minutes. This allows the flavors to meld together and intensify.
- After simmering, remove the pot from the heat and strain the liquid into a large pitcher, discarding the solids.
- Stir in the sugar, pineapple juice, and lemon juice. Stir until the sugar is completely dissolved.
- Refrigerate the zobo drink for at least 2 hours, or until it's well chilled.
- Serve the zobo drink over ice cubes, garnishing each glass with a sprig of mint for a refreshing twist.
