Zrazy is a cherished Polish dish with roots dating back to the medieval era, showcasing a delightful fusion of flavors. This traditional meal features thinly pounded beef rolled around a savory stuffing of crispy bacon, tangy pickles, and aromatic sautéed onions and garlic. Baked to perfection, each bite offers a tender and juicy experience, complemented by a rich beef broth that infuses the rolls with warmth and depth. Ingredients

Beef round steak
1.5 pounds, thinly pounded
Bacon
4 slices, chopped
Onion
1 medium, chopped
Garlic
2 cloves, minced
Pickles
4 small, sliced
Mustard
2 tablespoons
Flour
1/2 cup, for dredging
Vegetable oil
2 tablespoons, for frying
Beef broth
2 cups
Salt
to taste
Pepper
to taste
Sour cream
for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the drippings in the pan.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is golden brown and fragrant, about 5 minutes.
  4. Remove the skillet from heat and let the onion and garlic mixture cool slightly.
  5. On a clean cutting board, lay out the thinly pounded beef round steak.
  6. Spread mustard evenly over each piece of beef, ensuring full coverage for flavor.
  7. Place a slice of crispy bacon, a small pickle, and a spoonful of the sautéed onion and garlic mixture on each piece of beef.
  8. Roll up each beef slice tightly, securing with toothpicks if necessary.
  9. In a separate skillet, heat vegetable oil over medium-high heat. Once hot, dredge the rolled beef in flour, shaking off the excess.
  10. Carefully brown the rolled beef on all sides in the hot skillet, about 2-3 minutes per side.
  11. Transfer the browned beef rolls to a baking dish. Pour beef broth over the rolls, ensuring they are partially submerged.
  12. Cover the baking dish with aluminum foil and bake for 45 minutes.
  13. Remove the foil and continue baking for an additional 15 minutes, or until the beef is tender and cooked through.
  14. Remove toothpicks from the beef rolls before serving.
  15. Serve the zrazy hot, drizzled with pan juices and topped with a dollop of sour cream.
