Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the drippings in the pan.
- In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is golden brown and fragrant, about 5 minutes.
- Remove the skillet from heat and let the onion and garlic mixture cool slightly.
- On a clean cutting board, lay out the thinly pounded beef round steak.
- Spread mustard evenly over each piece of beef, ensuring full coverage for flavor.
- Place a slice of crispy bacon, a small pickle, and a spoonful of the sautéed onion and garlic mixture on each piece of beef.
- Roll up each beef slice tightly, securing with toothpicks if necessary.
- In a separate skillet, heat vegetable oil over medium-high heat. Once hot, dredge the rolled beef in flour, shaking off the excess.
- Carefully brown the rolled beef on all sides in the hot skillet, about 2-3 minutes per side.
- Transfer the browned beef rolls to a baking dish. Pour beef broth over the rolls, ensuring they are partially submerged.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the beef is tender and cooked through.
- Remove toothpicks from the beef rolls before serving.
- Serve the zrazy hot, drizzled with pan juices and topped with a dollop of sour cream.
