Zucchini and Garlic Bruschetta

This zucchini and garlic bruschetta is a delicious and flavorful appetizer that combines sautéed zucchini with garlic and fresh herbs on top of toasted bread slices.

Ingredients

  • Baguette (1, sliced)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Fresh basil (1/4 cup, chopped)
  • Olive oil (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Zucchini (2 medium, thinly sliced)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the zucchini slices and sauté until tender, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute.
  4. Remove from heat and stir in the chopped basil, salt, and black pepper.
  5. Preheat the oven to 375°F.
  6. Place the baguette slices on a baking sheet and toast in the oven for 5 minutes, or until lightly golden.
  7. Remove the toasted baguette slices from the oven and let them cool slightly.
  8. Top each slice with a spoonful of the zucchini and garlic mixture.
