Ingredients

Baguette
1, sliced into 1/2-inch thick slices
Zucchini
2 medium, sliced into thin rounds
Garlic
3 cloves, minced
Olive oil
4 tablespoons, divided
Salt
to taste
Black pepper

Parmesan cheese
1/2 cup, grated
Fresh basil
1/4 cup, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
  3. In a small bowl, combine 2 tablespoons of olive oil with a pinch of salt and brush the mixture onto both sides of the baguette slices.
  4. Bake the baguette slices for 8-10 minutes, or until they are crispy and golden brown, keeping an eye on them to avoid burning.
  5. While the bread is baking, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.
  6. Add the sliced zucchini and minced garlic to the skillet. Sauté for 5-6 minutes, stirring occasionally, until the zucchini is tender and lightly browned.
  7. Season the sautéed zucchini mixture with salt and black pepper to taste.
