
Zucchini and Garlic Crostini
These zucchini and garlic crostini are a delicious and flavorful appetizer or snack. The combination of sautéed zucchini and garlic on top of crispy bread is simply irresistible.
Ingredients
- Fresh basil (2 tablespoons, chopped)
- Parmesan cheese (1/4 cup, grated)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Zucchini (2 medium, thinly sliced)
- Baguette (1)
Instructions
- Preheat the oven to 375°F.
- Slice the baguette into 1/2-inch thick slices.
- Place the baguette slices on a baking sheet and brush both sides with olive oil.
- Bake for 8-10 minutes, or until the bread is crispy and golden brown.
- In a large skillet, heat the olive oil over medium heat.
- Add the zucchini slices and minced garlic to the skillet. Sauté for 5-6 minutes, or until the zucchini is tender and lightly browned.
- Season with salt and black pepper.
- Remove the toasted baguette slices from the oven and let them cool slightly.
- Top each slice with a spoonful of the sautéed zucchini and garlic mixture.
- Sprinkle grated Parmesan cheese over the top of each crostini.
- Garnish with fresh chopped basil.
- Serve immediately and enjoy!
