
Zucchini and Garlic Hummus
This zucchini and garlic hummus is a refreshing twist on traditional hummus, with the added flavor of roasted zucchini and garlic.
Ingredients
- Fresh parsley (2 tablespoons, chopped (for garnish))
- Paprika (1/4 teaspoon)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Cumin (1 teaspoon)
- Olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Tahini (2 tablespoons)
- Chickpeas (1 can (15 oz), drained and rinsed)
- Garlic cloves (3 cloves)
- Zucchini (2 medium, sliced)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the sliced zucchini and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
- Roast in the oven for 15-20 minutes, or until the zucchini is tender and slightly browned.
- In a food processor, combine the roasted zucchini, garlic cloves, chickpeas, tahini, lemon juice, olive oil, cumin, salt, black pepper, and paprika.
- Blend until smooth and creamy, scraping down the sides as needed.
- Transfer the hummus to a serving bowl and garnish with fresh parsley.
- Serve with pita bread, crackers, or fresh vegetables.
