Ingredients

Original recipe serves 6

Fresh parsley
2 tablespoons, finely chopped
Paprika
1 teaspoon
Black pepper
1 teaspoon
Salt
1 teaspoon, plus extra for seasoning
Cumin
1 teaspoon
Olive oil
1/4 cup, plus extra for drizzling
Lemon juice
2 tablespoons
Tahini
1/2 cup
Chickpeas
1 can (15 oz), drained and rinsed
Garlic cloves
3, peeled
Zucchini
1 large, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the sliced zucchini and garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for 15-20 minutes, or until the zucchini is tender and slightly browned.
  4. In a food processor, combine the roasted zucchini, garlic cloves, chickpeas, tahini, lemon juice, 1/4 cup olive oil, cumin, 1 teaspoon salt, black pepper, and paprika.
  5. Blend until smooth and creamy, scraping down the sides as needed for a consistent texture.
  6. Transfer the hummus to a serving bowl and garnish with fresh parsley. Drizzle with a little olive oil and a sprinkle of paprika for an extra touch of flavor.
  7. Serve with pita bread, crackers, or fresh vegetables. Enjoy this versatile dip as a starter, snack, or accompaniment to your main dish.
