Instructions
- Warm the extra virgin olive oil in a large skillet over medium heat.
- Add the minced garlic to the heated oil. Sauté for about a minute until it becomes aromatic and slightly golden. Be careful not to burn the garlic, as it will turn bitter.
- Introduce the sliced zucchini to the skillet. Season with salt and freshly ground black pepper. Stir to ensure all zucchini pieces are coated with the oil and garlic.
- Continue to sauté for 5 to 7 minutes, stirring occasionally. The zucchini should become tender and lightly browned.
- Remove the skillet from heat. Sprinkle the zucchini with freshly chopped parsley and give everything a final stir.
- Serve hot as a side dish. This sautéed zucchini pairs well with a variety of meals, particularly grilled meats or fish.
Tips
- For added crunch and nutty flavor, consider adding some toasted pine nuts or almonds.
- For a spicy kick, sprinkle some red pepper flakes before serving.
- The key to a great sauté is not to overcrowd your pan, which can cause the zucchini to steam instead of getting a nice golden color.
