Ingredients

Fresh parsley
2 tablespoons, finely chopped
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon, or to taste
Olive oil
2 tablespoons, extra virgin
Garlic
3 cloves, minced
Zucchini
2 large, sliced into half-moons

Instructions

  1. Warm the extra virgin olive oil in a large skillet over medium heat.
  2. Add the minced garlic to the heated oil. Sauté for about a minute until it becomes aromatic and slightly golden. Be careful not to burn the garlic, as it will turn bitter.
  3. Introduce the sliced zucchini to the skillet. Season with salt and freshly ground black pepper. Stir to ensure all zucchini pieces are coated with the oil and garlic.
  4. Continue to sauté for 5 to 7 minutes, stirring occasionally. The zucchini should become tender and lightly browned.
