Ingredients
- Fresh parsley
- 2 tablespoons, finely chopped
- Black pepper
- 1/2 teaspoon, freshly ground
- Salt
- 1/2 teaspoon, or to taste
- Olive oil
- 2 tablespoons, extra virgin
- Garlic
- 3 cloves, minced
- Zucchini
- 2 large, sliced into half-moons
Instructions
- Warm the extra virgin olive oil in a large skillet over medium heat.
- Add the minced garlic to the heated oil. Sauté for about a minute until it becomes aromatic and slightly golden. Be careful not to burn the garlic, as it will turn bitter.
- Introduce the sliced zucchini to the skillet. Season with salt and freshly ground black pepper. Stir to ensure all zucchini pieces are coated with the oil and garlic.
- Continue to sauté for 5 to 7 minutes, stirring occasionally. The zucchini should become tender and lightly browned.
- Remove the skillet from heat. Sprinkle the zucchini with freshly chopped parsley and give everything a final stir.
