
Zucchini and Garlic White Bean Dip
This creamy and flavorful dip is made with zucchini, garlic, and white beans. It's perfect for parties or as a healthy snack.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Paprika (1/4 teaspoon)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Tahini (2 tablespoons)
- Olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- White beans (1 can (15 oz), drained and rinsed)
- Garlic (2 cloves, minced)
- Zucchini (2 medium, grated)
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the grated zucchini and minced garlic. Cook for 5 minutes, or until the zucchini is tender.
- In a food processor, combine the cooked zucchini and garlic, white beans, lemon juice, tahini, salt, black pepper, and paprika. Process until smooth and creamy.
- Transfer the dip to a serving bowl and drizzle with the remaining olive oil.
- Garnish with fresh parsley.
- Serve with sliced vegetables, pita chips, or crackers.
