
Zucchini Noodles with Pesto
A light and fresh dish, perfect for a quick lunch or dinner. The zucchini noodles are tossed in a delicious homemade pesto sauce.
Ingredients
- Salt and pepper (to taste)
- Olive oil (1/2 cup)
- Parmesan cheese (1/2 cup, grated)
- Pine nuts (1/4 cup)
- Garlic (2 cloves)
- Basil leaves (2 cups)
- Zucchini (2 large, spiralized)
Instructions
- In a food processor, combine the basil, garlic, pine nuts, and Parmesan cheese. Pulse until coarsely chopped.
- With the food processor running, slowly add the olive oil until the pesto is smooth. Season with salt and pepper.
- In a large skillet, add the zucchini noodles and cook for 2-3 minutes, until just tender.
- Remove from heat and toss the zucchini noodles with the pesto.
- Serve immediately, garnished with extra Parmesan cheese if desired.
