- 3 cloves
- Olive oil
- 2 tablespoons
- Mussels, cleaned and debearded
- 2 lbs
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and finely chopped onion to the pot. Sauté until the onions become translucent, about 5 minutes.
- Stir in the diced tomatoes, white wine, chopped parsley, salt, and pepper. Allow the mixture to come to a simmer.
- Add the cleaned mussels to the simmering pot. Cover the pot and let the mussels cook for about 10 minutes, or until they have all opened up.
- Dispose of any mussels that have not opened after the cooking process, as these are likely not safe to eat.
- Serve the soup hot, ladling it into bowls. Complement it with crusty bread for an authentic Italian dining experience.
