Mussels, cleaned and debearded

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and finely chopped onion to the pot. Sauté until the onions become translucent, about 5 minutes.
  3. Stir in the diced tomatoes, white wine, chopped parsley, salt, and pepper. Allow the mixture to come to a simmer.
  4. Add the cleaned mussels to the simmering pot. Cover the pot and let the mussels cook for about 10 minutes, or until they have all opened up.
  5. Dispose of any mussels that have not opened after the cooking process, as these are likely not safe to eat.
