
Zuppa Di Cozze
Zuppa di Cozze, or Mussels Soup, is a popular Italian seafood dish. This recipe features mussels cooked in a flavorful tomato broth.
Ingredients
- Salt and pepper (to taste)
- Parsley (1/4 cup, chopped)
- White wine (1 cup)
- Tomatoes (2 cups, chopped)
- Onion (1 large, chopped)
- Garlic (4 cloves, minced)
- Olive oil (2 tablespoons)
- Mussels (2 pounds, cleaned and debearded)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and onion and cook until the onion is translucent, about 5 minutes.
- Add the tomatoes, wine, parsley, salt, and pepper. Bring to a simmer.
- Add the mussels to the pot. Cover and cook until the mussels have opened, about 10 minutes.
- Discard any mussels that have not opened.
- Ladle the soup into bowls and serve with crusty bread.
