- Onion

- 1 (15-ounce) can, drained and rinsed
- Diced tomatoes
- 1 (14.5-ounce) can
- Chicken broth
- 4 cups
- Italian seasoning
- 1 teaspoon
- Salt

- Pepper

- Fresh parsley
- 1/4 cup, chopped
- Grated parmesan cheese

Instructions
- In a large pot over medium heat, cook the Italian sausage until browned. Use a wooden spoon to break the sausage into small pieces as it cooks.
- Add the chopped onion, diced carrot, diced celery, and minced garlic to the pot. Stir well and cook until the vegetables are tender, approximately 5 minutes.
- Stir in the drained cannellini beans, diced tomatoes with their juices, chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for about 30 minutes, allowing the flavors to meld together.
- Taste the soup and adjust the seasoning if necessary.
- Stir in the chopped fresh parsley.
