Ingredients
- Grated parmesan cheese (for serving)
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Italian seasoning (1 teaspoon)
- Chicken broth (4 cups)
- Diced tomatoes (1 can (14.5 ounces))
- Cannellini beans (2 cans (15 ounces each), drained and rinsed)
- Garlic (3 cloves, minced)
- Celery (2 stalks, diced)
- Carrot (2 medium, diced)
- Onion (1 medium, chopped)
- Italian sausage (1 pound, casings removed)
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned, breaking it up into small pieces.
- Add the chopped onion, diced carrot, diced celery, and minced garlic to the pot. Cook until the vegetables are tender, about 5 minutes.
- Add the cannellini beans, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Taste and adjust the seasoning if needed.
- Stir in the chopped fresh parsley.
- Serve the Zuppa di Fagioli e Salsiccia hot, topped with grated Parmesan cheese.
