- Farro
- 1 cup, rinsed

- Zucchini
- 1, diced

- Thyme
- 1 teaspoon, dried
- Bay leaf
- 1
- Salt

- Parmesan cheese
- for garnish, freshly grated
Instructions
- Rinse the farro under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the diced tomatoes, zucchini, chopped spinach, rinsed farro, vegetable broth, bay leaf, thyme, salt, and pepper.

- Remove the bay leaf from the soup before serving.
