Zuppa Pavese

Zuppa Pavese is an exquisite and comforting soup hailing from the Lombardy region of Italy, specifically from the city of Pavia. This humble yet heart-warming dish is a delightful medley of rich chicken broth, crunchy toasted bread, and softly poached eggs. Ingredients

  • Salt (to taste)
  • Black pepper (to taste)
  • Unsalted butter (4 tablespoons)
  • Parmesan cheese (1/2 cup, freshly grated)
  • Eggs (4)
  • Stale bread (4 slices)
  • Chicken broth (4 cups)

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Meanwhile, toast the slices of stale bread in a toaster or oven until they are crispy and golden brown.
  3. Place one slice of toasted bread in each serving bowl.
  4. Carefully crack an egg over each slice of bread, trying to keep the yolk intact.
  5. Once the broth is boiling, carefully ladle it over the bread and egg in each bowl. Ensure that the egg is fully submerged in the broth. The heat of the broth will gently poach the egg.
  6. Sprinkle each serving with the freshly grated Parmesan cheese and add a tablespoon of butter for a rich finish.
  7. Season with salt and freshly ground black pepper to taste.
