- 1 cup, raw Almonds
- 1/2 cup Long-grain white rice
- 1 Cinnamon stick
- 4 cups, divided Water
- 1/2 cup (adjust to taste) Granulated sugar
- 1 teaspoon Vanilla extract

Instructions
- In a bowl, combine the raw almonds, long-grain white rice, and the cinnamon stick. Cover with 2 cups of water and let soak overnight at room temperature.
- The next day, remove the cinnamon stick from the mixture. In a blender, combine the soaked almonds, rice, and cinnamon with the soaked water. Blend until the mixture is smooth and creamy.
- Strain the blended mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Stir in the remaining 2 cups of water, granulated sugar, and vanilla extract until well combined. Taste and adjust sweetness as needed.
- Chill the horchata in the refrigerator until ready to serve. Stir well before serving over ice.
