- 1 large, finely chopped
- Garlic
- 4 cloves, minced

- 1-inch piece, grated
- Green chilies
- 2, slit
- Curry leaves
- 10-12 leaves
- Chicken
- 1.5 pounds, cut into pieces
- Tomatoes
- 2 large, pureed
- Fresh coriander leaves
- 1/4 cup, chopped (for garnish)
- Salt

- Turmeric powder
- 1/2 teaspoon
- Red chili powder
- 1 teaspoon
- Coriander powder
- 1 teaspoon
- Cumin powder
- 1 teaspoon
- Garam masala
- 1 teaspoon
Instructions
- In a large pan, heat the oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown, stirring occasionally.
- Add the minced garlic, grated ginger, slit green chilies, and curry leaves to the pan. Sauté for about a minute until fragrant.
- Introduce the chicken pieces to the pan, cooking them until they are golden brown on all sides, about 5-7 minutes.
- Pour in the tomato puree and cook for an additional 2-3 minutes, allowing the flavors to meld.
- Stir in the turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well to ensure the chicken is evenly coated with the spices.
- Cover the pan and reduce the heat to low. Cook for 15-20 minutes, or until the chicken is tender and cooked through, stirring occasionally.
- Once done, garnish with freshly chopped coriander leaves and serve hot with steamed rice or warm roti.
