Ingredients

Apricots
2 cups, sliced
Sugar
1 cup
Lemon juice
2 tablespoons
Cornstarch
1 tablespoon
Cinnamon
1 teaspoon
Flour tortilla chips
4 cups
Butter
1/2 cup, melted
Brown sugar
1/2 cup
Cinnamon
1/2 teaspoon
Whipped cream
as needed for topping
Vanilla ice cream
as needed for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan, combine the sliced apricots, sugar, lemon juice, cornstarch, and 1 teaspoon of cinnamon. Cook over medium heat, stirring occasionally, until the mixture thickens into a filling consistency. Once done, remove the saucepan from the heat and set aside.
  3. Arrange the flour tortilla chips in a single layer on a large baking sheet.
