
Arugula Pesto Pasta
This vibrant and flavorful arugula pesto pasta is a delicious and easy-to-make dish.
Ingredients
- Pasta (12 ounces)
- Black pepper (to taste)
- Salt (to taste)
- Olive oil (1/4 cup)
- Lemon juice (2 tablespoons)
- Pine nuts (1/4 cup)
- Parmesan cheese (1/2 cup, grated)
- Garlic (2 cloves)
- Arugula (4 cups)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
- In a food processor, combine the arugula, garlic, Parmesan cheese, pine nuts, lemon juice, olive oil, salt, and black pepper. Process until smooth and well combined.
- In a large pan, heat a drizzle of olive oil over medium heat. Add the arugula pesto and cook for 2-3 minutes, stirring occasionally.
- Add the cooked pasta to the pan and toss to coat the pasta evenly with the pesto sauce. Cook for an additional 2-3 minutes, or until heated through.
