Arugula Pesto Pasta

Ingredients

  • Pasta (12 ounces)
  • Black pepper (to taste)
  • Salt (to taste)
  • Olive oil (1/4 cup)
  • Lemon juice (2 tablespoons)
  • Pine nuts (1/4 cup)
  • Parmesan cheese (1/2 cup, grated)
  • Garlic (2 cloves)
  • Arugula (4 cups)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. In a food processor, combine the arugula, garlic, Parmesan cheese, pine nuts, lemon juice, olive oil, salt, and black pepper. Process until smooth and well combined.
  3. In a large pan, heat a drizzle of olive oil over medium heat. Add the arugula pesto and cook for 2-3 minutes, stirring occasionally.
  4. Add the cooked pasta to the pan and toss to coat the pasta evenly with the pesto sauce. Cook for an additional 2-3 minutes, or until heated through.
  5. Serve the arugula pesto pasta hot, garnished with extra Parmesan cheese and a sprinkle of black pepper.
