Ingredients

Sweet potatoes
4 medium-sized
Olive oil
2 tablespoons
Salt
to taste
Black pepper
to taste
Eggs
4 large
Avocado
2 ripe
Chives
2 tablespoons, finely chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce each sweet potato multiple times with a fork to allow steam to escape. Rub them generously with olive oil, and season with salt and pepper.
  3. Place the sweet potatoes on a baking sheet and bake for 45 minutes, or until they are tender and easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the avocado. Cut each avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until creamy, and season with salt and pepper to taste.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each sweet potato and scoop out a small amount of flesh to create space for the avocado and egg.
  6. Fill each sweet potato with the mashed avocado, spreading it evenly.
  7. Carefully crack an egg into each sweet potato on top of the avocado, taking care not to break the yolk.
  8. Return the sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the eggs are cooked to your desired doneness.
  9. Remove from the oven, sprinkle with chopped chives, and serve immediately.
