- Sweet potatoes (4 medium-sized)
- Olive oil (2 tablespoons)

- Eggs (4 large)
- Avocado (2 ripe)
- Chives (2 tablespoons, finely chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce each sweet potato multiple times with a fork to allow steam to escape. Rub them generously with olive oil, and season with salt and pepper.
- Place the sweet potatoes on a baking sheet and bake for 45 minutes, or until they are tender and easily pierced with a fork.
- While the sweet potatoes are baking, prepare the avocado. Cut each avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until creamy, and season with salt and pepper to taste.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each sweet potato and scoop out a small amount of flesh to create space for the avocado and egg.
