Instructions
- In a large bowl, combine the warm water, granulated sugar, and yeast. Stir gently and let sit for about 10 minutes until frothy.
- Beat in the eggs, evaporated milk, and salt until well combined.
- Gradually add the bread flour, mixing until a soft dough forms. The dough should be slightly tacky but not overly sticky.
- Cover the bowl with a clean towel and let the dough rise in a warm place for about 2 hours, or until it has doubled in size.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C). Ensure there is enough oil for the beignets to float while frying.
- On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into squares or rectangles, approximately 2 inches in size.
- Carefully fry the beignets in the hot oil, a few at a time, until they puff up and turn golden brown, about 2-3 minutes per side. Use a slotted spoon to transfer them to paper towels to drain excess oil.
- While the beignets are still warm, dust generously with powdered sugar.
- For the chocolate sauce, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate. Let sit for 1 minute, then stir until smooth and glossy.
- Serve the warm beignets with the chocolate sauce for dipping, and enjoy!
Tips
- For an extra touch, consider adding a splash of vanilla extract to the chocolate sauce for depth of flavor.
- Experiment with different flavored chocolate, such as dark or white chocolate, for a unique twist.
- If you want a lighter version, you can bake the beignets at 375°F (190°C) for 12-15 minutes instead of frying.
