Ingredients

All-purpose flour
1 cup
Milk
1 cup
Eggs

Granulated sugar
2 tablespoons
Salt
1/4 teaspoon
Unsalted butter
2 tablespoons, melted
Fresh blackberries
2 cups, plus more for serving
Lemon juice
1 tablespoon
Granulated sugar (for sauce)
1/4 cup
Powdered sugar
for dusting

Instructions

  1. In a blender, combine the flour, milk, eggs, granulated sugar, salt, and melted butter. Blend until the mixture is smooth and well-combined, about 30 seconds.
  2. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or cooking spray.
  3. Pour 1/4 cup of the batter into the skillet and quickly swirl the pan to coat the bottom evenly with the batter.
  4. Cook the crepe for about 2 minutes, or until the edges begin to lift and the bottom is golden brown. Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side.
  5. Transfer the cooked crepe to a plate and cover to keep warm. Repeat with the remaining batter to make more crepes, greasing the skillet as needed.
  6. In a small saucepan, combine the blackberries, lemon juice, and 1/4 cup granulated sugar. Cook over medium heat, stirring gently, until the blackberries break down and release their juices, about 5 minutes.
  7. Remove the sauce from heat and let it cool slightly before serving.
  8. To serve, place a crepe on a plate, spoon some of the blackberry sauce onto the center, and fold the crepe in half or roll it up. Dust with powdered sugar and garnish with additional fresh blackberries if desired.
