Ingredients

Prawns
1 pound, peeled and deveined
Cornstarch
1/4 cup
Egg white
1, lightly beaten
Salt
1/2 teaspoon
White pepper
1/4 teaspoon
Vegetable oil
2 tablespoons
Garlic
3 cloves, minced
Ginger
1 tablespoon, minced
White wine
1/4 cup
Soy sauce
2 tablespoons
Sugar
1 tablespoon
Vinegar
1 tablespoon (rice vinegar preferred)
Chicken broth
1/2 cup
Green onions
2, chopped for garnish

Instructions

  1. In a mixing bowl, combine the prawns with cornstarch, egg white, salt, and white pepper. Mix well to coat the prawns evenly, then set aside to marinate for 15 minutes.
  2. Heat vegetable oil in a wok or large frying pan over medium-high heat. Once the oil is hot, add the prawns and fry for about 2-3 minutes, or until they turn pink and are cooked through. Remove the prawns from the wok and set aside.
  3. In the same wok, lower the heat slightly and add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.
  4. Pour in the white wine, soy sauce, sugar, vinegar, and chicken broth. Stir to combine and bring the mixture to a boil.
  5. Return the cooked prawns to the wok and stir-fry for an additional 2 minutes, ensuring the prawns are well coated with the sauce and heated through.
  6. Remove from heat, garnish with chopped green onions, and serve immediately.
