Ingredients
- Sausage casings (10-12 feet)
- Dried thyme (1 teaspoon)
- Dried sage (1 teaspoon)
- Nutmeg (1/2 teaspoon)
- Black pepper (1 teaspoon)
- Salt (2 teaspoons)
- Breadcrumbs (100g)
- Pork belly (500g, chopped)
- Pork shoulder (1kg, chopped)
Instructions
- Combine the pork shoulder and pork belly in a large bowl.
- Add the breadcrumbs, salt, pepper, nutmeg, sage, and thyme. Mix well until all the ingredients are evenly distributed.
- Rinse the sausage casings in warm water and keep them in a bowl of warm water until you're ready to use them.
- Using a sausage stuffer, stuff the meat mixture into the casings. Twist the sausages into links at regular intervals.
- Place the sausages in the refrigerator for at least 1 hour to firm up.
- Preheat your grill or barbecue to medium heat.
- Cook the sausages for 15-20 minutes, turning regularly, until they are browned all over and cooked through.
