Onions
2 large, thinly sliced
Beef broth
1 cup
Fresh thyme
1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
Salt
to taste
Black pepper

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the thinly sliced onions to the skillet and cook, stirring occasionally, until they become soft and caramelized, about 15-20 minutes.
  3. Once the onions are beautifully caramelized, pour in the beef broth and add the chopped thyme. Season the mixture with salt and pepper to taste.
  4. Allow the onion mixture to simmer, reducing the broth by half, about 10 minutes, stirring occasionally to prevent sticking.
  5. While the onions are simmering, grill the hot dogs to your desired level of doneness, whether that be lightly charred or fully cooked.
  6. Place the grilled hot dogs inside the toasted buns.
  7. Generously spoon the rich onion and broth mixture over each hot dog.
  8. Sprinkle the grated Gruyère cheese on top of the onions, allowing it to cascade down the sides.
  9. Transfer the assembled hot dogs to an oven-safe dish and place them under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to avoid burning.
