Ful Medames

- 1 small, finely chopped Red onion
- 1 medium, diced Tomatoes
- 1/4 cup, chopped Fresh parsley
- 2, sliced Hard-boiled eggs
- 4 pieces, for serving Pita bread

Instructions
- Soak the dried fava beans in plenty of water overnight to soften them.
- Drain the soaked beans and rinse them well under cold water.
- In a large pot, cover the fava beans with fresh water and bring to a boil. Reduce the heat to low and let the beans simmer for about 1 hour, or until they are tender.
- In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the cooked fava beans to the pan with the garlic. Using a fork or potato masher, mash the beans slightly, leaving some whole for texture.
- Stir in the lemon juice, cumin, and salt. Cook for an additional 5 minutes, stirring occasionally to combine the flavors.
- In a small bowl, mix the chopped parsley, diced tomatoes, and finely chopped red onion to create a fresh topping.
- To serve, spoon the ful medames into a bowl, drizzle with the remaining olive oil, and top with the tomato-onion mixture and sliced hard-boiled eggs.
