Bone-in ham
1 (8-10 lb) ham
Salt
to taste
Black pepper
to taste
Ground cinnamon
1 teaspoon
Whole cloves
10-12 cloves
Dijon mustard
1/2 cup
Honey
1/2 cup
Brown sugar
1 cup

Instructions

  1. Preheat the oven to 325°F (165°C) and position the rack in the lower third of the oven.
  2. Place the ham in a large roasting pan, flat side down. Score a diamond pattern about 1/8-inch deep into the fat of the ham.
  3. Season the ham generously with salt and pepper.
  4. Roast the ham in the preheated oven for 2 hours, uncovered.
  5. In a small saucepan over medium heat, combine the brown sugar, honey, Dijon mustard, ground cinnamon, and whole cloves. Stir until the sugar is melted and the mixture is smooth.
  6. Brush the glaze over the ham, making sure to get it into the scored areas for maximum flavor.
  7. Continue to bake the ham for an additional 30-45 minutes, or until the ham is golden brown and the internal temperature reaches 140°F (60°C).
  8. Remove the ham from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute for a juicier ham.
