Servings: 4

Ingredients

Pita bread
4 pieces
Chicken breast
1 pound, boneless and skinless
Olive oil
1/4 cup
Lemon juice
2 tablespoons, freshly squeezed
Garlic
3 cloves, minced
Dried oregano
1 tablespoon
Salt
1 teaspoon, divided
Black pepper
1/2 teaspoon
Red onion
1/2, thinly sliced
Tomato
1, diced
Cucumber
1, diced
Greek yogurt
1 cup
Fresh parsley
1/4 cup, chopped

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, 1/2 teaspoon salt, and black pepper to create a flavorful marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes, or up to 1 hour for enhanced flavor.
  3. Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates if necessary.
  4. Grill the marinated chicken for about 6-8 minutes per side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (75°C).
  5. Remove the chicken from the grill and let it rest for 5 minutes. Then, slice it into thin strips.
  6. While the chicken is resting, prepare the tzatziki sauce: In a separate bowl, combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, chopped parsley, and the remaining 1/2 teaspoon of salt and pepper. Stir until well combined.
  7. Warm the pita bread in a toaster or on the grill for a few seconds on each side to make them pliable.
  8. Spread a generous amount of tzatziki sauce on each pita bread.
  9. Top with sliced grilled chicken and additional vegetables as desired.
  10. Fold the pita bread in half and serve warm, optionally with a side of extra tzatziki sauce for dipping.
