
Greek Pita
This Greek pita recipe features a delicious combination of grilled chicken, fresh vegetables, and tangy tzatziki sauce, all wrapped in a warm pita bread.
Ingredients
- Pita bread (2, warmed)
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Fresh parsley (2 tablespoons, chopped)
- Red onion (1/4, thinly sliced)
- Tomato (1, diced)
- Cucumber (1/2, diced)
- Greek yogurt (1/2 cup)
- Garlic (2 cloves, minced)
- Lemon juice (2 tablespoons)
- Olive oil (2 tablespoons)
- Chicken breast (2, boneless and skinless)
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well.
- Add the chicken breasts to the marinade and let them marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken for about 6-8 minutes per side, or until cooked through.
- Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
- In a separate bowl, combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, chopped parsley, salt, and pepper. Mix well to make the tzatziki sauce.
- Warm the pita bread in a toaster or on a grill for a few seconds on each side.
- Spread a generous amount of tzatziki sauce on each pita bread.
- Top with grilled chicken slices and additional vegetables if desired.
- Fold the pita bread in half and serve warm.
