Horchata Cold Brew

Ingredients
- 4 cups, divided Water
- 1 cup Uncooked rice
- 2 Cinnamon sticks
- 1/2 cup, or to taste Sweetened condensed milk
- 1 cup Cold brew coffee
- for serving Ice cubes
- for garnish Ground cinnamon

Instructions
- In a blender, combine the uncooked rice, cinnamon sticks, and 2 cups of water.
- Blend on high until the rice and cinnamon sticks are finely ground, creating a thick mixture.
- Add the remaining 2 cups of water to the blender and blend again for about 30 seconds until well mixed.
- Place a fine-mesh strainer over a large bowl and pour the rice mixture through the strainer. Use a spoon to press down and extract as much liquid as possible.
- Discard the rice solids, and transfer the strained horchata to a pitcher.
- Stir in the sweetened condensed milk until fully combined, adjusting sweetness to taste.
- Fill two glasses with ice cubes, about halfway.
- Pour 1/2 cup of cold brew coffee into each glass over the ice.
- Top each glass with the horchata mixture until filled, stirring gently to combine.
- Sprinkle ground cinnamon on top for garnish before serving.
