Traditional Japanese Okonomiyaki
Okonomiyaki, often referred to as 'Japanese pizza', is a savory and satisfying pancake packed full of flavor. This dish is a staple street food in Japan, especially in Osaka, where it originated. This version of Okonomiyaki brings together the sweetness of cabbage, the umami of bonito and seaweed flakes, and the richness of Japanese mayonnaise and Okonomiyaki sauce, all enveloped in a savory pancake base. The name 'Okonomiyaki' literally means 'grilled as you like it', reflecting the versatile nature of this dish. You can customize the toppings to your liking, but this recipe provides a traditional take on this mouth-watering Japanese delicacy.
Ingredients
- Aonori (dried seaweed flakes)
- 1 tablespoon
- Bonito flakes
- 1 tablespoon
- Japanese mayonnaise
- 2 tablespoons
- Okonomiyaki sauce
- 2 tablespoons
- Tenkasu (tempura scraps)
- 1/4 cup
- Bacon
- 2 slices, cooked and crumbled
- Green onions
- 2, chopped
- Eggs
- 2
- Water
- 1/2 cup
- All-purpose flour
- 1 cup
- Cabbage
- 2 cups, shredded
Instructions
- In a large bowl, combine the shredded cabbage, all-purpose flour, water, eggs, and chopped green onions. Mix well until the batter is of a smooth consistency.
- Heat a non-stick skillet or griddle over medium heat. Pour a ladleful of the batter onto the skillet, spreading it into a round shape with the back of the ladle.
- Sprinkle the cooked and crumbled bacon and tenkasu (tempura scraps) on top of the batter.
- Allow the okonomiyaki to cook undisturbed for about 4-5 minutes, or until the bottom is golden brown. Then, using a spatula, carefully flip the okonomiyaki to cook the other side for another 4-5 minutes.
- Once cooked, transfer the okonomiyaki to a serving plate. Drizzle the okonomiyaki sauce evenly over the top, followed by the Japanese mayonnaise.
- Lastly, sprinkle the bonito flakes and aonori (dried seaweed flakes) over the sauce and mayonnaise.
- Serve the okonomiyaki hot. Enjoy this authentic taste of Japan right in your own kitchen!
Tips
- You can add other ingredients into the batter or as toppings, such as cooked shrimp, squid, or cheese. The beauty of okonomiyaki is that it's customizable to your preference.
- For a vegetarian version, simply omit the bacon and bonito flakes.
- If you can't find okonomiyaki sauce in your local store, you can make a simple version at home by mixing 1.5 tablespoons of ketchup, 1 tablespoon worcestershire sauce, 1/2 teaspoon soy sauce, and 1/2 tablespoon honey.
